YUM-AZING Baked Chicken Recipe


Chicken cooked & served!


This recipe is tasty and absolutely amazing! "Baked Chicken," does not do it justice. Try it out for yourself and you will see why it is called YUM-AZING Baked Chicken! 

I had taken a gander at a few chick-fil-a copy cat recipes and a few yummy looking recipes from Pinterest (darn! That addiction...) when I came up with this. I will say if you want a spicier version or a Cajun version be sure to add 3TBSP creole seasoning and 2TSP of cayenne pepper. I love some spicy, hot chicken, but not everyone I cook for does so, this was not made spicy. 

Ingredients: 

2 boneless, skinless chicken breast 
1 cup pickle juice (sour dill is my favorite) 
½ cup flour 
1 TBSP powdered sugar 
½ TSP paprika 
½ TSP salt 
¼ TSP black pepper 
¼ TSP garlic powder 
¼ TSP onion salt 
¼ TSP basil

I am a total sucker for anything in the Slow Cooker.  I love the convenience and ease.  This tasty looking Crockpot Creamy Mushroom Chicken Casserole recipe from Grass Fed Mama has chicken, yum, creamy, yum and mushrooms, yum, and I couldn't help but fall in love.  


Since we all know exactly how indecisive I truly am, I chose another favorite this week.  So, just like Crockpot cooking, this one seems super easy! This Easy Refrigerator Oatmeal recipe from My Unentitled Life is super simple and I love that you put in overnight, and then finish it when you are running out the door in the morning.  Customizable, healthy and portable! What is not to love?

Thrifty & Easy Slow Cooker Pot Roast




Have I mentioned lately how much I love my slow cooker?  I do not know what I would do without it.  I use it 3+ times a week. Minimum. 

I am not sure if this is really a conventional Pot Roast, but then again, I am not always the most conventional person.  I'm such a rebel - I throw caution to the wind - I accept the terms and conditions without even reading them. Seriously, who has time to read all that stuff??  Sorry, I am also easily distracted.  

As I was saying, I am a fly by the seat of my pants type of gal sometimes, and I am pretty lackadaisical with the whole measuring thing.  I believe it is overrated.  That also may be because I couldn't find my measuring cup. Again. Last time I saw it, my daughter was eating cereal out of it. Why, you ask? Because she wanted to measure how much she ate. (DUH, Mom!!)  That is what I was told when I saw it happening.  I just shook my head and kept walking.  

Even when I know where the measuring cup is, I generally just, 'Eyeball it,' most of the time, especially when it comes to the spices.  In the future, I will do my best to make note of the measurements I use. Scouts honor.  (: 

I enjoy experimenting with flavors and new recipes, and most of the time, my family likes what I make.  The biggest problem with my method is that I do not always remember exactly HOW I made something.  Another reason the note taking is a good idea.  But then again, that is part of the, "Easy," of this Pot Roast recipe.  No stress and no measuring required! 

Easy Slow Cooker Pot Roast

Ingredients:

2-3 lb Chuck Roast
2-3 small onions, cut as big or as small as you would like
5-10 carrots, again, cut as big or as small as you would like
5-15 potatoes, I used small red potatoes (use as many or as few as you want)
2 beef bullion cubes, I ground mine up
minced garlic, to taste
pepper, to taste
1/2 cup (ish) water 

Now, I don't really think it will make much of a difference how you put the ingredients in, but this is how I did it:

Place the chuck roast on the bottom of the crock pot.  Add Pepper.
Layer onions, then carrots.  Add more Pepper, ground up beef bullion and place potatoes on top.  Pour water over potatoes.  Spoon minced garlic on top of potatoes.  Take OCD like care to get garlic on EACH potato.  For some reason, this really mattered to me at the time.  

Cook on low for 6-8 hours, or high 3-4 hours.  Check it, slow cookers times and temps vary.  Take my word on this, I know from experience.



Use as many carrots and potatoes as your family will eat.
I don't believe it really matters where each item goes, or even if you omit, or add more to your Easy Pot Roast.  Maybe you like peppers?  Throw them in! Want to use Ranch seasoning?  Give it a whirl!  Use whatever type of potatoes that you want, or have on hand.  Go crazy and slice them up even! The beauty of this dinner is it's no-fuss, no worry and no hassle.  And thrifty!  This dinner was less than $10 to make. So, toss it all in, set it and forget it.  Well, don't really forget it.  That probably wouldn't be a good thing.  

This recipe easily fed the 3 adults and the 2 kids in my house, and was a hit!  
I am pretty sure that it was the perfect placement of the garlic that brought this dish together so nicely.
